Ingredients

  • 1 cup sugar
  • ½ cup olive oil
  • 2 large eggs
  • Zest of 1 orange

  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking pan or line with parchment paper.
  3. In a mixing bowl, whisk together flour, baking powder, and salt.
  4. In a separate bowl, cream together sugar and olive oil; add eggs one at a time, mixing well.
  5. Stir in the orange zest and juice.
  6. Gradually combine the dry ingredients into the wet mixture until just combined.
  7. Gently fold in the cranberries.
  8. Pour batter into the prepared pan and smooth the top.
  9. Bake for 30-35 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a vegan option, replace eggs with flaxseed meal or applesauce. If fresh cranberries are unavailable, use dried cranberries that have been hydrated.
