Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 cup sugar
- ½ cup olive oil
- 2 large eggs
- Zest of 1 orange
- Juice of ½ orange
- 1 ½ cups fresh cranberries
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×9-inch baking pan or line with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together sugar and olive oil; add eggs one at a time, mixing well.
- Stir in the orange zest and juice.
- Gradually combine the dry ingredients into the wet mixture until just combined.
- Gently fold in the cranberries.
- Pour batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve plain or with powdered sugar/whipped cream.
Notes
For a vegan option, replace eggs with flaxseed meal or applesauce. If fresh cranberries are unavailable, use dried cranberries that have been hydrated.
