Ingredients

  • 1 whole chicken (3 to 4 pounds)
  • ½ cup pure maple syrup
  • 1 cup fresh cranberries
  • 4 cloves minced garlic
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (rosemary and thyme, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine maple syrup, cranberries, garlic, olive oil, salt, pepper, and herbs.
  3. Pat the chicken dry and loosen the skin. Rub some marinade underneath and pour the rest over the top.
  4. Place the chicken in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C), basting occasionally.
  5. Allow the chicken to rest for 10 minutes before carving and serving with roasted cranberries and pan juices.

Notes

For best flavors, allow the chicken to marinate for at least 1 hour or overnight. Adjust ingredients based on availability.
