Ingredients
- 1 whole chicken (3 to 4 pounds)
- ½ cup pure maple syrup
- 1 cup fresh cranberries
- 4 cloves minced garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (rosemary and thyme, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine maple syrup, cranberries, garlic, olive oil, salt, pepper, and herbs.
- Pat the chicken dry and loosen the skin. Rub some marinade underneath and pour the rest over the top.
- Place the chicken in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C), basting occasionally.
- Allow the chicken to rest for 10 minutes before carving and serving with roasted cranberries and pan juices.
Notes
For best flavors, allow the chicken to marinate for at least 1 hour or overnight. Adjust ingredients based on availability.
