- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup dried cranberries
- Zest of 1 orange
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the softened butter and sugar until light and fluffy.
- Add in the vanilla extract and orange zest, mixing until well combined.
- Gradually add the flour and salt, mixing until the dough comes together.
- Toss in the dried cranberries and fold them into the dough gently.
- Shape the dough into a log, about 2 inches in diameter, and wrap it in parchment paper. Chill in the refrigerator for at least 30 minutes.
- Slice the chilled dough into 1/4-inch thick rounds and place them on a parchment-lined baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on a wire rack.
