Ingredients
- 2 lbs boneless chicken breasts or thighs
- 2 cups cornflakes, crushed
- 2 large eggs, beaten
- 1 cup all-purpose flour
- 1/2 cup hot honey
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- Cooking oil (peanut, canola, or olive) for frying
Instructions
- Slice chicken into tenders, about an inch thick.
- Set up three bowls: one with flour, one with beaten eggs, and one with crushed cornflakes mixed with spices.
- Dredge each tender in flour, dip in egg, then coat in the cornflake mixture, pressing firmly.
- Heat about half an inch of oil in a skillet over medium heat.
- Fry the tenders in the hot oil for 3-4 minutes per side until golden brown and cooked through (165°F).
- Transfer cooked tenders to a paper towel-lined plate and drizzle generously with hot honey.
- Garnish with fresh herbs if desired and serve.
Notes
For a healthier option, try baking the tenders instead of frying. Ensure the oil is at the right temperature to avoid sogginess.
