Ingredients

  • 2 lbs boneless chicken breasts or thighs
  • 2 cups cornflakes, crushed
  • 2 large eggs, beaten
  • 1 cup all-purpose flour

  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Cooking oil (peanut, canola, or olive) for frying

Instructions

  1. Slice chicken into tenders, about an inch thick.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with crushed cornflakes mixed with spices.
  3. Dredge each tender in flour, dip in egg, then coat in the cornflake mixture, pressing firmly.
  4. Heat about half an inch of oil in a skillet over medium heat.
  5. Fry the tenders in the hot oil for 3-4 minutes per side until golden brown and cooked through (165°F).
  6. Transfer cooked tenders to a paper towel-lined plate and drizzle generously with hot honey.
