- 1 cup farmer’s cheese (or ricotta/cottage cheese)
- 1 cup all-purpose flour (or gluten-free flour blend)
- 1 large egg
- 2 tablespoons sugar
- 2 cups fresh berries or stone fruits (for compote)
- 1 tablespoon lemon juice
- ½ teaspoon cinnamon (optional)
Instructions
- Make the Dumpling Dough: In a bowl, mix farmer’s cheese, egg, and sugar. Gradually add flour until dough is soft but not sticky. Knead gently, cover and let rest.
- Prepare the Sweet Compote: Toss fruit with sugar, lemon juice, and cinnamon in a saucepan. Simmer over low heat until syrupy. Set aside.
- Form the Dumplings: Roll out dough to 1/4-inch thickness, cut into squares, fill with cheese mixture, and seal edges.
- Cook the Dumplings: Boil salted water and drop dumplings in batches. Cook until they float, about 3-5 minutes.
- Serve: Drizzle compote over warm dumplings and enjoy.
Notes
For added richness, top with whipped cream or toasted nuts before serving.
