Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/2 teaspoon almond extract or spices (nutmeg, cinnamon)

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  2. Add the egg and vanilla extract and beat until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture until just combined.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
  5. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  6. Roll out the chilled dough on a floured surface to about ¼ inch thick and cut shapes with cookie cutters.
  7. Bake for 8-10 minutes or until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack. Decorate with icing and sprinkles once completely cooled.

Notes

To lighten, consider using whole wheat flour for added fiber. Store cookies in an airtight container for up to a week.
