Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 teaspoon almond extract or spices (nutmeg, cinnamon)
Instructions
- Cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Add the egg and vanilla extract and beat until well combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture until just combined.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
- Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
- Roll out the chilled dough on a floured surface to about ¼ inch thick and cut shapes with cookie cutters.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack. Decorate with icing and sprinkles once completely cooled.
Notes
To lighten, consider using whole wheat flour for added fiber. Store cookies in an airtight container for up to a week.
