Ingredients
- 1 pound gnocchi (fresh or frozen)
- 1 cup cashews
- 2 cups mushrooms (button, cremini, or shiitake), sliced
- 1 cup tikka masala sauce
- 2 cups fresh spinach or kale
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss gnocchi with sliced mushrooms, chopped cashews, tikka masala sauce, and olive oil until well coated.
- Spread the mixture evenly on a parchment-lined sheet pan and roast for 20-25 minutes until gnocchi are golden and mushrooms are tender.
- Five minutes before removing from the oven, scatter spinach or kale over the top to wilt slightly.
- Serve and enjoy, garnished with fresh cilantro or a squeeze of lemon if desired.
