Ingredients

  • 1 pound gnocchi (fresh or frozen)
  • 1 cup cashews
  • 2 cups mushrooms (button, cremini, or shiitake), sliced
  • 1 cup tikka masala sauce
  • 2 cups fresh spinach or kale
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss gnocchi with sliced mushrooms, chopped cashews, tikka masala sauce, and olive oil until well coated.
  3. Spread the mixture evenly on a parchment-lined sheet pan and roast for 20-25 minutes until gnocchi are golden and mushrooms are tender.
  4. Five minutes before removing from the oven, scatter spinach or kale over the top to wilt slightly.
