Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- A pinch of salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/2 cup chopped chocolate or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and a pinch of salt.
- In a separate bowl, combine the eggs, milk, melted butter, and vanilla extract; stir until well blended.
- Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Stir in the chocolate chips or chopped chocolate.
- Spoon the batter into each muffin cup, filling them about 2/3 full. Bake for 10-12 minutes or until a toothpick inserted comes out clean or with a few moist crumbs.
- Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.
Notes
For a healthier twist, substitute whole wheat flour for all-purpose flour. Consider using almond or oat milk for a dairy-free option.
