Homemade Berry Ice Cream Bars made with fresh berries and creamy yogurt, perfect for summer indulgence.

Ingredients

  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup whole milk yogurt or heavy cream
  • 1/4 cup honey, maple syrup, or agave nectar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Rinse and chop the fresh berries. Pat them dry.
  2. Blend the berries, yogurt or cream, sweetener, vanilla extract, and lemon juice until combined.
  3. Taste and adjust sweetness if necessary.
  4. Pour the mixture into ice cream bar molds, filling them about three-quarters full.
  5. Insert wooden sticks after an hour of freezing.
  6. Freeze for at least 4-6 hours or overnight.
  7. To unmold, run warm water over the outside of the molds and gently pull out the bars.

Notes

Use quality, ripe berries for the best flavor. Experiment with sweetness and texture to suit your preferences.
