Ingredients
- 1 cup farro
- 2 cups vegetable broth
- 8 oz mushrooms (cremini or portobello), chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- 1/2 cup breadcrumbs or grated parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the farro under cold water.
- In a medium saucepan, combine farro and vegetable broth, then bring to a boil. Reduce heat and simmer until tender (25-30 minutes), then strain excess liquid.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute, then add mushrooms, cooking until golden brown (5-7 minutes). Season with salt, pepper, and thyme.
- Combine cooked farro with sautéed mushrooms and thyme in a bowl. Optional: mix in ricotta or cream cheese for creaminess.
- Transfer the mixture to a greased baking dish, and sprinkle breadcrumbs or parmesan on top.
- Bake for 20-25 minutes or until the top is golden brown and crusty.
- Let cool for a few minutes before serving. Garnish with fresh thyme if desired.
Notes
For substitutions, try quinoa or brown rice instead of farro, and mix seasonal vegetables for added nutrition.
