Ingredients
- 1 cup farro
- 2 cups vegetable broth
- 2 cups mixed mushrooms (cremini and shiitake)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add minced garlic and sauté for about a minute until fragrant.
- Add the mushrooms to the skillet, sautéing until browned and tender, around 5-7 minutes. Season generously with salt and pepper.
- Stir in the thyme, followed by the rinsed farro, allowing it to toast slightly for a minute or two.
- Pour in vegetable broth, bringing the mix to a gentle simmer.
- Transfer everything to a baking dish, cover it with foil, and place it in the oven.
- Bake for approximately 30-35 minutes until the farro is cooked through and has absorbed the liquid.
- Remove from the oven, garnish with fresh thyme, and enjoy!
Notes
For added creaminess, stir in a splash of heavy cream or a dollop of Greek yogurt just before serving.
