Ingredients

  • 1 cup farro
  • 2 cups vegetable broth
  • 2 cups mixed mushrooms (cremini and shiitake)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add minced garlic and sauté for about a minute until fragrant.
  3. Add the mushrooms to the skillet, sautéing until browned and tender, around 5-7 minutes. Season generously with salt and pepper.
  4. Stir in the thyme, followed by the rinsed farro, allowing it to toast slightly for a minute or two.
  5. Pour in vegetable broth, bringing the mix to a gentle simmer.
  6. Transfer everything to a baking dish, cover it with foil, and place it in the oven.
  7. Bake for approximately 30-35 minutes until the farro is cooked through and has absorbed the liquid.
  8. Remove from the oven, garnish with fresh thyme, and enjoy!

Notes

For added creaminess, stir in a splash of heavy cream or a dollop of Greek yogurt just before serving.
