Ingredients

  • 4 cups fresh arugula
  • 2 crisp apples (Honeycrisp or Granny Smith)
  • 1/2 cup walnuts (or pecans)
  • 1/3 cup crumbled feta or goat cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic or apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Wash the arugula and pat it dry. Slice the apples into thin wedges or cubes, keeping the skin on.
  2. Toast the walnuts in a skillet over medium heat for 3-5 minutes until fragrant.
  3. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper. Adjust flavors as desired.
  4. In a large bowl, toss the arugula, apples, toasted nuts, and crumbled cheese together. Pour the dressing over and mix gently.
  5. Serve immediately for the best texture.

Notes

Dress the salad just before serving to maintain freshness. If making substitutions, feel free to use baby spinach instead of arugula, and almonds or hazelnuts in place of walnuts.
