Ingredients

  • 2 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups mixed mushrooms (cremini, shiitake, porcini)
  • 4 cups vegetable or chicken broth
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup kale or spinach, chopped (optional)
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/2 cup cream or milk (optional)

Instructions

  1. Chop the onions and garlic. Heat a skillet over medium heat with olive oil and sauté until fragrant, about 5 minutes.
  2. Add the mushrooms and cook until they release moisture and are browned.
  3. Toss in diced carrots and celery, cooking until they soften.
  4. Pour in the broth and bring to a gentle simmer.
  5. Add the herbs and season to taste, and let the soup simmer for at least 20 minutes.
  6. If desired, stir in cream or sour cream at the end.
  7. Taste and adjust seasonings before serving.
