Ingredients
- 2 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 cups mixed mushrooms (cremini, shiitake, porcini)
- 4 cups vegetable or chicken broth
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 cup kale or spinach, chopped (optional)
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 2 bay leaves
- Salt and pepper to taste
- 1/2 cup cream or milk (optional)
Instructions
- Chop the onions and garlic. Heat a skillet over medium heat with olive oil and sauté until fragrant, about 5 minutes.
- Add the mushrooms and cook until they release moisture and are browned.
- Toss in diced carrots and celery, cooking until they soften.
- Pour in the broth and bring to a gentle simmer.
- Add the herbs and season to taste, and let the soup simmer for at least 20 minutes.
- If desired, stir in cream or sour cream at the end.
- Taste and adjust seasonings before serving.
