Ingredients
- 1 bunch fresh dill
- 4 medium potatoes, chopped
- 1 large onion, chopped
- 4 cups vegetable broth
- 2 medium carrots, chopped
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- Olive oil or butter, for sautéing
Instructions
- Warm a large pot over medium heat with olive oil or butter. Sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and stir for another minute until fragrant.
- Incorporate chopped potatoes and carrots, then pour in the vegetable broth. Bring to a gentle boil and then reduce to simmer.
- Cook until the vegetables are tender, about 15-20 minutes.
- Stir in the fresh dill and season with salt and pepper to taste. Serve hot with extra dill for garnish.
Notes
For a creamier soup, blend a portion of the soup or add a splash of cream. Avoid overcooking the potatoes to maintain texture.
