Ingredients

  • 1 bunch fresh dill
  • 4 medium potatoes, chopped
  • 1 large onion, chopped
  • 4 cups vegetable broth
  • 2 medium carrots, chopped
  • 2 cloves garlic, minced

  • Black pepper, to taste
  • Olive oil or butter, for sautéing

Instructions

  1. Warm a large pot over medium heat with olive oil or butter. Sauté the chopped onion until translucent, about 5 minutes.
  2. Add minced garlic and stir for another minute until fragrant.
  3. Incorporate chopped potatoes and carrots, then pour in the vegetable broth. Bring to a gentle boil and then reduce to simmer.
  4. Cook until the vegetables are tender, about 15-20 minutes.
  5. Stir in the fresh dill and season with salt and pepper to taste. Serve hot with extra dill for garnish.

Notes

For a creamier soup, blend a portion of the soup or add a splash of cream. Avoid overcooking the potatoes to maintain texture.
