Ingredients

  • 2 cans of high-quality tuna, drained and flaked
  • 1 cup breadcrumbs (regular or panko)
  • 1 large egg, beaten (or flaxseed meal for vegan)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 teaspoons lemon juice
  • Olive oil for frying

Instructions

  1. In a large mixing bowl, drain and flake the canned tuna.
  2. Add breadcrumbs, beaten egg, chopped onion, garlic, and herbs into the bowl. Season with salt, pepper, and cayenne.
  3. Mix gently until combined, then form the mixture into patties about 3 inches wide.
  4. Heat olive oil in a large skillet over medium heat.
  5. Place the patties in the skillet, cooking for 4-5 minutes per side until golden brown.
  6. Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve immediately.

Notes

For extra flavor, chill the patties for 30 minutes before cooking. Adjust seasoning to taste.
