Ingredients
- 2 cans of high-quality tuna, drained and flaked
- 1 cup breadcrumbs (regular or panko)
- 1 large egg, beaten (or flaxseed meal for vegan)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 teaspoons lemon juice
- Olive oil for frying
Instructions
- In a large mixing bowl, drain and flake the canned tuna.
- Add breadcrumbs, beaten egg, chopped onion, garlic, and herbs into the bowl. Season with salt, pepper, and cayenne.
- Mix gently until combined, then form the mixture into patties about 3 inches wide.
- Heat olive oil in a large skillet over medium heat.
- Place the patties in the skillet, cooking for 4-5 minutes per side until golden brown.
- Transfer cooked patties to a plate lined with paper towels to absorb excess oil. Serve immediately.
Notes
For extra flavor, chill the patties for 30 minutes before cooking. Adjust seasoning to taste.
