- 1 cup unsalted butter, softened

- 1 teaspoon vanilla extract

- 2 tablespoons matcha powder
- 1 cup fresh strawberries, diced

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, matcha powder, and salt, then gradually add to the wet ingredients, stirring until just combined.
- Gently fold in the diced strawberries.
- Drop portions of the dough onto the prepared baking sheet, spacing them out. Bake for 12-15 minutes or until the edges are slightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For vibrant cookies, sprinkle a bit of matcha powder on top before baking.
