Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/2 cup milk (any type)
- 1 teaspoon vanilla extract
- 1 cup whole rolled oats
- 1 tablespoon baking powder
- Optional: fruit, nuts, or spices for customization
Instructions
- Preheat your oven to 350°F (175°C) and grease or line your muffin tin.
- In a blender, combine the cottage cheese, eggs, maple syrup, milk, and vanilla. Blend until smooth.
- In a large bowl, mix the rolled oats, baking powder, and any spices (if using).
- Pour the blended mixture into the dry ingredients and stir until just combined. Fold in any optional ingredients.
- Spoon the batter evenly into the muffin cups, filling each about 3/4 full.
- Bake for about 18-20 minutes, or until golden brown and a toothpick comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
Notes
For extra tenderness, avoid over-mixing the batter. Muffins can also be customized with different fruits or spices.
