Ingredients

  • 2 cups cooked rice
  • 1/2 cup chopped fresh herbs (cilantro, green onions)
  • 1 beaten egg
  • 1 cup sautéed mushrooms (shiitake or button)
  • Salt and pepper to taste
  • 1/2 teaspoon chili flakes
  • Oil for frying (canola or sesame)

Instructions

  1. In a mixing bowl, combine cooked rice, chopped herbs, beaten egg, salt, pepper, and spices.
  2. Add sautéed mushrooms (or preferred vegetables) and mix until combined.
  3. Heat a skillet over medium heat and add oil.
  4. Scoop a handful of the rice mixture into the skillet and flatten into a pancake shape.
  5. Cook for 3-4 minutes on each side until golden brown and crispy.
  6. In a small bowl, mix soy sauce, chili paste, lime juice, and honey for the spicy dipping sauce.
  7. Drain pancakes on paper towels and serve warm with the dipping sauce.
