Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 3/4 cups all-purpose flour
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Beat together softened butter and granulated sugar until creamy.
- Add egg yolk and vanilla extract, mixing until well combined.
- Gradually mix in flour until dough comes together.
- Wrap the dough in plastic wrap and refrigerate for at least 60 minutes.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough to about 1/4 inch thick on a floured surface.
- Cut shapes using a cookie cutter, cutting out a smaller shape in half of them.
- Place cut-out cookies on a baking sheet and bake for 10-12 minutes until lightly golden.
- Allow cookies to cool on a wire rack.
- Spread raspberry jam on the solid cookie base and place the cut-out cookie on top.
- Dust with powdered sugar before serving.
Notes
Ensure butter is softened but not melted for the right texture. Experiment with different jam flavors for variety.
