Ingredients
- 2 large onions (yellow or sweet)
- 1 cup freshly grated Parmesan cheese
- 1 cup breadcrumbs (Panko or regular)
- 2 large eggs
- 2 cloves garlic (fresh, minced, or 1 tsp garlic powder)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano or thyme (optional)
- Vegetable oil for frying
Instructions
- Slice the onions into thin rounds and soak them in cold water for 30 minutes.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, garlic, salt, and herbs.
- Dredge each onion ring in flour, dip it in the egg, and then coat it in the breadcrumb mixture.
- Heat vegetable oil in a skillet to 350°F (175°C) and fry the onion rings in batches until golden brown, about 2-3 minutes. Drain on paper towels.
- Serve immediately with your choice of dipping sauces.
Notes
For a baked version, brush the coated onion rings with olive oil and bake at 425°F (220°C) for 15-20 minutes, turning halfway through.
