Ingredients

  • 2 large onions (yellow or sweet)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup breadcrumbs (Panko or regular)
  • 2 large eggs
  • 2 cloves garlic (fresh, minced, or 1 tsp garlic powder)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano or thyme (optional)
  • Vegetable oil for frying

Instructions

  1. Slice the onions into thin rounds and soak them in cold water for 30 minutes.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, Parmesan, garlic, salt, and herbs.
  3. Dredge each onion ring in flour, dip it in the egg, and then coat it in the breadcrumb mixture.
  4. Heat vegetable oil in a skillet to 350°F (175°C) and fry the onion rings in batches until golden brown, about 2-3 minutes. Drain on paper towels.
  5. Serve immediately with your choice of dipping sauces.

Notes

For a baked version, brush the coated onion rings with olive oil and bake at 425°F (220°C) for 15-20 minutes, turning halfway through.
