Ingredients
- 2 lbs boneless chicken (breast or thighs)
- 2 cups chicken broth (or vegetable broth)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 packet gravy mix (or homemade)
- 1/2 cup heavy cream (or sour cream)
- Salt and pepper, to taste
Instructions
- Prepare your ingredients: dice the onions and garlic, slice the mushrooms, and season your chicken with salt and pepper.
- Sauté the onions, garlic, and mushrooms in a skillet until fragrant and softened, about 5-7 minutes.
- Layer the seasoned chicken in the bottom of your crockpot, followed by the sautéed vegetables. Pour in the broth and sprinkle the herbs on top.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream or sour cream for creaminess; adjust seasoning as needed.
- Serve the chicken and gravy over mashed potatoes or rice. Garnish with chopped parsley.

You can customize by adding seasonal vegetables like zucchini or snap peas for extra flavor and texture.
