Ingredients
- 1 cup ube puree
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ cup sugar
- 2 large eggs
- 1 cup milk
- ¼ cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Mash or blend the ube into a smooth puree if using whole ube.
- In a large bowl, whisk together flour, baking powder, and sugar until well combined.
- In another bowl, mix ube puree, eggs, milk, melted butter, and vanilla extract until smooth.
- Fold the wet ingredients into the dry mixture gently; a few lumps are okay.
- Preheat the waffle maker.
- Pour batter onto the preheated waffle maker and cook according to manufacturer’s instructions.
- Serve immediately with preferred toppings like fruits, syrup, or whipped cream.
Notes
For extra crispiness, consider letting the batter rest for 10 minutes before cooking.
