Ingredients

  • 1 cup ube puree
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ cup sugar
  • 2 large eggs
  • 1 cup milk

Instructions

  1. Mash or blend the ube into a smooth puree if using whole ube.
  2. In a large bowl, whisk together flour, baking powder, and sugar until well combined.
  3. In another bowl, mix ube puree, eggs, milk, melted butter, and vanilla extract until smooth.
  4. Fold the wet ingredients into the dry mixture gently; a few lumps are okay.
  5. Preheat the waffle maker.
  6. Pour batter onto the preheated waffle maker and cook according to manufacturer’s instructions.
  7. Serve immediately with preferred toppings like fruits, syrup, or whipped cream.
