- 1 boneless or bone-in turkey breast
- 1 whole head of fresh garlic

Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the garlic: Slice off the top of the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until soft and caramelized.

- Coat the turkey: Pat the turkey breast dry and coat it generously with the herb mixture.
- Place the turkey breast on a roasting pan or sheet and roast in the oven, approximately 20 minutes per pound.
- Check for doneness using a meat thermometer to ensure an internal temperature of 165°F (74°C).
