Ingredients
- 2 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- A pinch of salt
- ¾ cup unsulfured molasses
- ¾ cup brown sugar
- 2 large eggs
- ⅓ cup vegetable oil
- 8 ounces softened cream cheese
- ½ cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and prepare a loaf pan.
- In a bowl, blend together cream cheese, sugar, and vanilla until smooth and creamy.
- In another bowl, whisk together flour, ginger, baking soda, baking powder, and salt.
- Mix molasses, brown sugar, eggs, and oil in a separate bowl until smooth.
- Gradually combine the dry ingredients with the wet mixture, folding gently until just combined.
- Pour half of the batter into the prepared pan, dollop half of the cream cheese mixture, and swirl gently. Repeat with remaining batter and cream cheese.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Allow the loaf to cool completely before slicing for the best texture. Can be frozen for up to three months.
