Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • A pinch of salt
  • ¾ cup unsulfured molasses
  • ¾ cup brown sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 8 ounces softened cream cheese
  • ½ cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. In a bowl, blend together cream cheese, sugar, and vanilla until smooth and creamy.
  3. In another bowl, whisk together flour, ginger, baking soda, baking powder, and salt.
  4. Mix molasses, brown sugar, eggs, and oil in a separate bowl until smooth.
  5. Gradually combine the dry ingredients with the wet mixture, folding gently until just combined.
  6. Pour half of the batter into the prepared pan, dollop half of the cream cheese mixture, and swirl gently. Repeat with remaining batter and cream cheese.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Allow the loaf to cool completely before slicing for the best texture. Can be frozen for up to three months.
