Ingredients
- Sourdough or whole grain bread
- Fresh ricotta cheese
- Eggs
- Fresh herbs (basil, chives, or parsley)
- Extra virgin olive oil
- Salt and pepper
Instructions
- Toast the bread until golden and crisp.
- Heat olive oil in a non-stick skillet over medium heat and crack in the eggs, cooking until the whites are set.
- Spread the toasted bread with warm ricotta cheese.
- Place cooked eggs on top of the ricotta.
- Garnish with fresh herbs and a drizzle of olive oil. Serve warm.
