Ingredients

  • 1 lb Boneless Chicken (breast or thighs)
  • 4 tbsp Butter
  • 2 cups Tomatoes (fresh or canned)
  • 1 cup Heavy Cream (or coconut milk for a lighter option)
  • 1 large Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 inch Ginger (minced)
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Garam Masala
  • 1 tsp Turmeric
  • 1 tsp Red Chili Powder
  • Fresh Cilantro (for garnish)

Instructions

  1. Marinate the chicken with yogurt, ginger, garlic, and spices. Allow it to marinate for at least 30 minutes.
  2. Heat butter in a skillet over medium heat. Sauté diced onions until golden brown.
  3. Add the marinated chicken and sauté until browned and cooked through, about 5-7 minutes.
  4. Add tomatoes (and any leftover marinade) and simmer for 10-15 minutes.
  5. Stir in the cream and let the sauce thicken, adjusting seasonings to taste.
  6. Garnish with chopped cilantro and serve warm.
