Ingredients
- 2 boneless chicken breasts or thighs
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 beaten eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup grated Parmesan cheese
- 1 cup romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 2 ciabatta rolls or brioche buns
- 1 lemon, for squeezing
Instructions
- Pat chicken dry and season with salt, pepper, garlic powder, and onion powder.
- Set up a dredging station with plates of flour, beaten eggs, and panko breadcrumbs mixed with Parmesan.
- Coat chicken in flour, dip in egg, then press into breadcrumbs.
- Heat oil in a skillet over medium-high heat and fry chicken until golden brown, about 4–5 minutes per side.
- Drain chicken on a paper towel and assemble sandwich on toasted bread with Caesar dressing, chicken, lettuce, and additional Parmesan.
- Squeeze fresh lemon juice over the top before serving.
