Instructions
- Prepare the Dough: In a mixing bowl, cream together the softened butter, brown sugar, and molasses until fluffy. Add in the egg and mix well.
- In a separate bowl, whisk together the flour, ground spices, baking soda, and salt. Gradually add the dry ingredients to the wet, mixing just until combined.
- Chill the Dough: Wrap your dough in plastic wrap and refrigerate for at least 120 minutes.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/4 inch thick, cut out shapes, and bake for 8-10 minutes.
- Prepare the Frosting: While the cookies cool, beat together softened butter and powdered sugar, adding vanilla extract and milk to reach desired consistency.
- Sandwich the Cookies: Spread frosting on the flat side of one cookie and press another on top to create a sandwich.
