Ingredients

  • 4 boneless chicken thighs or breasts
  • 4 tablespoons butter
  • 6 cloves fresh garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 2 tablespoons fresh thyme (or other herbs)
  • 1 cup chicken broth (or vegetable broth)
  • Salt and pepper to taste
  • Squeeze of lemon to finish

Instructions

  1. Prep your ingredients by cleaning and slicing mushrooms, mincing garlic, and chopping herbs.
  2. Heat a skillet over medium-high heat; add a tablespoon of butter and sear the chicken for 5-7 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add remaining butter and sauté garlic until fragrant, then add mushrooms and cook until tender, about 4-5 minutes.
  4. Return chicken to the skillet, add chicken broth, and let it simmer on low heat for 10 minutes.
  5. Add fresh herbs and a squeeze of lemon; adjust seasoning with salt and pepper.
  6. Serve warm with your favorite side dish.

Notes

For a vegetarian version, substitute chicken for tofu or tempeh. Serve with rice, quinoa, or a fresh salad.
