Ingredients
- 4 boneless chicken thighs or breasts
- 4 tablespoons butter
- 6 cloves fresh garlic, minced
- 8 ounces cremini mushrooms, sliced
- 2 tablespoons fresh thyme (or other herbs)
- 1 cup chicken broth (or vegetable broth)
- Salt and pepper to taste
- Squeeze of lemon to finish
Instructions
- Prep your ingredients by cleaning and slicing mushrooms, mincing garlic, and chopping herbs.
- Heat a skillet over medium-high heat; add a tablespoon of butter and sear the chicken for 5-7 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add remaining butter and sauté garlic until fragrant, then add mushrooms and cook until tender, about 4-5 minutes.
- Return chicken to the skillet, add chicken broth, and let it simmer on low heat for 10 minutes.
- Add fresh herbs and a squeeze of lemon; adjust seasoning with salt and pepper.
- Serve warm with your favorite side dish.
Notes
For a vegetarian version, substitute chicken for tofu or tempeh. Serve with rice, quinoa, or a fresh salad.
