- Sausage (Pork or Chicken)
- Potatoes (Yukon Gold or Waxy)
- Onions (Sweet or Yellow)
- Garlic (Fresh)
- Chicken or Vegetable Broth
- Heavy Cream or Sour Cream
- Fresh Herbs (Parsley or Thyme)
- Salt
- Black Pepper
- Red Pepper Flakes
Instructions
- Brown the sausage in a large pot with a drizzle of olive oil over medium heat.
- Add diced onions and minced garlic, sautéing until soft and fragrant (3-5 minutes).
- Add diced potatoes and mix well for 2-3 minutes to infuse them with flavors.
- Pour in the broth and bring to a boil, then reduce heat and simmer until potatoes are fork-tender.
- Stir in cream and season with salt, pepper, and red pepper flakes, simmering for another 5-10 minutes.
- Just before serving, stir in freshly chopped herbs.
- Ladle into bowls and serve hot, optionally with crusty bread or a side salad.
Notes
For a lighter version, omit the cream or use lean sausage. This soup can be made ahead and freezes well.
