Ingredients

  • Sausage (Pork or Chicken)
  • Potatoes (Yukon Gold or Waxy)
  • Onions (Sweet or Yellow)
  • Garlic (Fresh)
  • Chicken or Vegetable Broth
  • Heavy Cream or Sour Cream
  • Fresh Herbs (Parsley or Thyme)
  • Salt
  • Black Pepper
  • Red Pepper Flakes

Instructions

  1. Brown the sausage in a large pot with a drizzle of olive oil over medium heat.
  2. Add diced onions and minced garlic, sautéing until soft and fragrant (3-5 minutes).
  3. Add diced potatoes and mix well for 2-3 minutes to infuse them with flavors.
  4. Pour in the broth and bring to a boil, then reduce heat and simmer until potatoes are fork-tender.
  5. Stir in cream and season with salt, pepper, and red pepper flakes, simmering for another 5-10 minutes.
  6. Just before serving, stir in freshly chopped herbs.
  7. Ladle into bowls and serve hot, optionally with crusty bread or a side salad.

Notes

For a lighter version, omit the cream or use lean sausage. This soup can be made ahead and freezes well.
