Delightful cookies featuring rich brown butter, crunchy toffee, and a hint of coffee.

Ingredients

  • 1 cup unsalted butter
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup brewed coffee
  • 1 cup toffee bits

Instructions

  1. Brown the butter in a saucepan over medium-low heat for 5-7 minutes until golden brown and nutty.
  2. In a mixing bowl, combine granulated sugar and brown sugar, then pour the warm browned butter over and stir until combined.
  3. Allow to cool slightly, then add the egg and vanilla extract, mixing well.
  4. In another bowl, whisk together flour, baking soda, and salt, then gradually add to the wet mixture until just combined.
  5. Fold in the brewed coffee and toffee bits until evenly distributed.
  6. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Scoop tablespoon-sized balls of dough onto the sheet, bake for 10-12 minutes until edges are set.
  9. Cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.

Notes

For best results, do not skip the chilling step.
