Ingredients
- 1 cup unsalted butter
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup brewed coffee
- 1 cup toffee bits
Instructions
- Brown the butter in a saucepan over medium-low heat for 5-7 minutes until golden brown and nutty.
- In a mixing bowl, combine granulated sugar and brown sugar, then pour the warm browned butter over and stir until combined.
- Allow to cool slightly, then add the egg and vanilla extract, mixing well.
- In another bowl, whisk together flour, baking soda, and salt, then gradually add to the wet mixture until just combined.
- Fold in the brewed coffee and toffee bits until evenly distributed.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop tablespoon-sized balls of dough onto the sheet, bake for 10-12 minutes until edges are set.
- Cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
Notes
For best results, do not skip the chilling step.
