Ingredients
- Pasta (spaghetti, fettuccine, or penne)
- Fresh ricotta
- Fresh spinach
- Garlic (minced)
- Fresh lemon (juice and zest)
- Butter or olive oil
- Salt
- Pepper
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
- Sauté the Garlic: Melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add Spinach: Toss the fresh spinach into the skillet and stir until wilted (about 2-3 minutes).
- Mix the Ricotta: Lower the heat and add ricotta, lemon juice, lemon zest, salt, and pepper. Stir until creamy and combined.
- Combine: Drain the pasta, reserving a little pasta water, and add the pasta to the skillet. Toss everything together, adding reserved pasta water to loosen if needed.
- Serve: Plate the pasta, garnish with extra lemon zest and pepper, and drizzle with olive oil or sprinkle with Parmesan if desired.
Notes
Serve fresh from the skillet with a light salad or grilled protein for a complete meal.
