Ingredients

  • Pasta (spaghetti, fettuccine, or penne)
  • Fresh ricotta
  • Fresh spinach
  • Garlic (minced)
  • Fresh lemon (juice and zest)
  • Butter or olive oil
  • Salt
  • Pepper

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
  2. Sauté the Garlic: Melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add Spinach: Toss the fresh spinach into the skillet and stir until wilted (about 2-3 minutes).
  4. Mix the Ricotta: Lower the heat and add ricotta, lemon juice, lemon zest, salt, and pepper. Stir until creamy and combined.
  5. Combine: Drain the pasta, reserving a little pasta water, and add the pasta to the skillet. Toss everything together, adding reserved pasta water to loosen if needed.
  6. Serve: Plate the pasta, garnish with extra lemon zest and pepper, and drizzle with olive oil or sprinkle with Parmesan if desired.
