Ingredients

  • 1 lb chicken breast or thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup mushrooms, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup feta cheese or olives (optional)
  • 1 cup couscous or quinoa

Instructions

  1. Marinate the chicken with olive oil, lemon juice, and minced garlic for at least 30 minutes.
  2. Cook couscous or quinoa according to package instructions and set aside.
  3. In a skillet, sauté mushrooms with a splash of olive oil until golden brown, then add bell peppers and cook until tender.
  4. Preheat grill and grill chicken until fully cooked, about 6–8 minutes per side.
  5. Slice the grilled chicken and assemble bowls with cooked grain, chicken, sautéed vegetables, and toppings of choice.
