Ingredients
- 1 lb chicken breast or thighs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 cup bell peppers, sliced
- 1 cup cucumbers, chopped
- 1 cup cherry tomatoes, halved
- 1 cup mushrooms, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh dill, chopped
- 1/2 cup feta cheese or olives (optional)
- 1 cup couscous or quinoa
Instructions
- Marinate the chicken with olive oil, lemon juice, and minced garlic for at least 30 minutes.
- Cook couscous or quinoa according to package instructions and set aside.
- In a skillet, sauté mushrooms with a splash of olive oil until golden brown, then add bell peppers and cook until tender.
- Preheat grill and grill chicken until fully cooked, about 6–8 minutes per side.
- Slice the grilled chicken and assemble bowls with cooked grain, chicken, sautéed vegetables, and toppings of choice.
