- 2 large onions (sweet or yellow)
- 1 cup freshly grated Parmesan cheese
- 1 cup all-purpose flour
- 1 cup cornmeal or Panko breadcrumbs
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 large eggs
- Fresh or dried herbs (parsley or Italian seasoning)
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the onions into thin rings, about ¼ inch thick.
- In one bowl, combine flour with salt, pepper, and garlic powder. In another bowl, whisk the eggs. In a third bowl, mix breadcrumbs with grated Parmesan.
- Dip each onion ring into the flour mixture, followed by the egg, and then coat with the breadcrumb and cheese mixture.
- Arrange the coated rings on a parchment-lined baking sheet in a single layer.
- Bake for 15-20 minutes until golden brown, flipping halfway through.
- Allow to cool slightly before serving with your favorite dipping sauce.
Notes
For gluten-free, substitute with gluten-free flour and breadcrumbs. Consider adding spices like cayenne for an extra kick.
