Ingredients

  • 3 Fresh apples, sliced (Honeycrisp or Granny Smith)
  • 1 cup Dried cranberries
  • 1 cup Walnuts, chopped
  • 4 cups Baby spinach or mixed greens
  • 1/2 cup Feta or goat cheese, crumbled
  • 1/4 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and slice apples into bite-sized pieces, leaving the skin on.
  2. In a large bowl, combine sliced apples, dried cranberries, and chopped walnuts.
  3. Rinse spinach or mixed greens thoroughly and add to the bowl.
  4. In a separate jar, mix olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper, shaking until combined.
  5. Drizzle dressing over the salad just before serving to keep greens crisp.
  6. Sprinkle chosen cheese on top and give it a gentle toss.

Notes

Slice apples right before serving to prevent browning. Toss apples in lemon juice if preparing ahead of time.
