Ingredients
- 3 Fresh apples, sliced (Honeycrisp or Granny Smith)
- 1 cup Dried cranberries
- 1 cup Walnuts, chopped
- 4 cups Baby spinach or mixed greens
- 1/2 cup Feta or goat cheese, crumbled
- 1/4 cup Olive oil
- 2 tablespoons Balsamic vinegar
- 1 tablespoon Honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and slice apples into bite-sized pieces, leaving the skin on.
- In a large bowl, combine sliced apples, dried cranberries, and chopped walnuts.
- Rinse spinach or mixed greens thoroughly and add to the bowl.
- In a separate jar, mix olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper, shaking until combined.
- Drizzle dressing over the salad just before serving to keep greens crisp.
- Sprinkle chosen cheese on top and give it a gentle toss.
Notes
Slice apples right before serving to prevent browning. Toss apples in lemon juice if preparing ahead of time.
