Ingredients
- 1 medium eggplant
- 3 cloves fresh garlic, minced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh thyme, chopped
- 1/2 cup breadcrumbs (Plain or Panko)
- 1/4 cup Parmesan cheese, grated
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplant into 1/2-inch thick rounds.
- Sprinkle sea salt on both sides and let sit for 20 minutes.
- In a bowl, mix breadcrumbs, Parmesan, garlic, and herbs.
- Pat the eggplant dry and brush with olive oil.
- Press each slice into the breadcrumb mixture until coated.
- Arrange on a baking sheet lined with parchment paper.
- Bake for 15 minutes, then flip each slice and bake for an additional 10-15 minutes until golden and crunchy.
- Serve warm and enjoy!
