- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 cup matcha powder
- 1 cup fresh strawberries, diced
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Cream the softened butter and granulated sugar in a mixing bowl until light and fluffy.
- Mix in the vanilla extract, then add the flour, matcha powder, and salt. Fold in the diced strawberries gently.
- Scoop tablespoon-sized portions of dough and roll them into balls, placing them on the prepared baking sheet.
- Bake for 12-15 minutes until the edges are light golden brown and the centers are soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
These cookies can be frozen for up to three months. Store in an airtight container at room temperature for up to a week.
