Ingredients

  • 1/2 cup brown sugar
  • 2 3/4 cups all-purpose flour
  • 2 large eggs

  • 1 tsp vanilla extract
  • Fillings: peanut butter, fruit preserves, or chocolate spreads

Instructions

  1. Cream the butter and sugars together in a mixing bowl until pale and fluffy.
  2. Add the eggs one at a time, followed by the vanilla extract, mixing well.
  3. In another bowl, whisk together flour and baking powder, then gradually blend into the butter mixture until combined.
  4. Divide the dough in half, roll one half into a rectangle, and spread the desired filling.
  5. Roll the dough into a log, seal the edges, and chill in the refrigerator for about 30 minutes.
  6. Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds and place on a lined baking sheet.
  7. Bake for 10-12 minutes until edges are golden. Let cool on a wire rack.
