Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 3/4 cups all-purpose flour
- 2 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- Fillings: peanut butter, fruit preserves, or chocolate spreads
Instructions
- Cream the butter and sugars together in a mixing bowl until pale and fluffy.
- Add the eggs one at a time, followed by the vanilla extract, mixing well.
- In another bowl, whisk together flour and baking powder, then gradually blend into the butter mixture until combined.
- Divide the dough in half, roll one half into a rectangle, and spread the desired filling.
- Roll the dough into a log, seal the edges, and chill in the refrigerator for about 30 minutes.
- Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds and place on a lined baking sheet.
- Bake for 10-12 minutes until edges are golden. Let cool on a wire rack.
Notes
For decoration, consider icing or a sprinkle of powdered sugar on top of the cooled cookies.
