A delightful dish featuring barramundi fillets coated in a crunchy macadamia nut crust, perfectly complemented by hints of garlic and fresh herbs.

Ingredients

  • 4 barramundi fillets
  • 1 cup macadamia nuts
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh dill
  • 2 tablespoons melted butter or olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon or lime

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a food processor, pulse the macadamia nuts, garlic, and fresh herbs until finely chopped.
  3. Lightly season the barramundi fillets with salt and pepper. Brush each fillet with melted butter or olive oil.
  4. Press the macadamia mixture firmly onto the top of each fillet.
  5. Place the fillets on the prepared baking sheet and bake for about 15-20 minutes, or until the fish flakes easily with a fork.
  6. For an extra touch of crisp, broil the fish for the last 2–3 minutes.
  7. Remove from the oven, let rest, and squeeze lemon or lime juice over the top before serving.

Notes

Feel free to substitute barramundi with tilapia or halibut. Fresh herbs provide the best flavor, but dried herbs can be used in a pinch.
