  • Total Time: 35 minutes
  • Yield: 12 servings

Ingredients

  • 1 package puff pastry
  • 1 cup fresh mushrooms (cremini or shiitake), sliced
  • 2 tablespoons fresh thyme, leaves stripped
  • 2 cloves garlic, minced
  • 4 ounces cream cheese
  • 1/2 cup Parmesan cheese, grated
  • 1 egg, for egg wash
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Clean and slice mushrooms, mince garlic, and strip thyme leaves from stems.
  3. In a skillet, melt butter over medium heat and sauté the mushrooms until golden. Add garlic and thyme, cooking for another minute.
  4. Reduce heat and mix in cream cheese and half of the Parmesan until melted and creamy.
  5. Roll out puff pastry to 1/4 inch thick and cut into squares.
  6. Place a spoonful of filling in the center of each square, fold corners over and pinch to seal.
  7. Brush with egg wash, sprinkle with remaining Parmesan, and bake for 15-20 minutes until golden brown.
  8. Let cool slightly before serving.

Notes

These squares can be frozen before baking. Bake directly from the freezer, adding extra baking time.
