Ingredients
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (dill, parsley, or oregano)
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add the chopped spinach to the skillet and stir until just wilted.
- In a large bowl, combine sautéed spinach and garlic with feta, herbs, breadcrumbs, and beaten eggs. Mix until well combined and season with salt and pepper.
- Scoop portions of the mixture and shape them into small patties. Place them on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and crispy. Flip halfway through baking for even crispiness.
- Let cool for a few minutes before serving warm with your favorite dip.
Notes
For added crunch, consider broiling the crisps for the last few minutes, watching carefully to prevent burning. These can be stored in an airtight container for up to 4 days.
