Ingredients

  • 2 cups all-purpose flour
  • 1 pound ground lamb
  • 1 finely chopped onion
  • 1 cup finely chopped tomatoes
  • 1 cup finely chopped bell peppers
  • 1 tablespoon olive oil
  • Fresh parsley, chopped
  • Salt and pepper, to taste
  • Spices (cumin, paprika, red pepper flakes)
  • Lemon juice, for drizzling

Instructions

  1. Prepare the Dough: In a mixing bowl, combine flour with a pinch of salt and enough warm water (about ¾ cup) to form a soft dough. Knead until smooth, cover, and allow it to rest for 30 minutes.
  2. Make the Filling: Heat olive oil in a skillet over medium heat. Add the onion and cook until translucent. Add the ground lamb, spices, and chopped tomatoes and bell peppers. Sauté until the meat is browned and the veggies are soft. Stir in parsley and season with salt and pepper.
  3. Roll out the Dough: Divide the dough into small balls and roll each into a thin circle, about 10 inches in diameter.
  4. Top and Bake: Preheat oven to 475°F (245°C). Spread the lamb filling evenly over each dough circle, place on a baking sheet, and bake for 8-10 minutes until edges are crispy.
  5. Serve: Drizzle with fresh lemon juice and serve immediately with fresh herbs or yogurt.
