Ingredients
- 3 pounds sweet potatoes, peeled and cubed
- 0.5 cup pure maple syrup
- 1 cup raisins
- 1 cup chopped pecans
- 0.25 cup butter or coconut oil
- 0.5 cup brown sugar
- 1 teaspoon cinnamon
- 0.5 teaspoon nutmeg
- Salt, to taste
Instructions
- Boil cubed sweet potatoes in salted water until tender, about 15-20 minutes, or bake at 400°F for about an hour.
- Drain and mash sweet potatoes. Stir in maple syrup, butter (or coconut oil), salt, cinnamon, and nutmeg until smooth.
- Fold in raisins evenly into the mashed sweet potatoes.
- In a separate bowl, mix chopped pecans, brown sugar, melted butter, and cinnamon.
- Spread sweet potato mixture into a greased 9×13 inch baking dish. Sprinkle pecan topping over it.
- Bake at 350°F for 25-30 minutes, until topping is golden.
- Let cool for a few minutes before serving.
Notes
For a dairy-free option, replace butter with coconut oil. This dish pairs well with roast turkey or glazed ham.
