A delightful and easy breakfast that combines the sweetness of strawberries with the nutty crunch of chia seeds for a nutritious start to your day.

Ingredients

  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • 2 cups milk or yogurt (almond, coconut, or Greek)
  • Fresh strawberries, diced
  • Sweetener (honey, maple syrup, or agave nectar)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, combine the oats and chia seeds.
  2. Pour in the milk (or yogurt) and stir until well mixed. Add the vanilla extract and sweetener, stirring again to combine.
  3. Fold in the diced strawberries gently.
  4. Divide the mixture into two or more jars, layering additional strawberries on top.
  5. Cover and refrigerate overnight (or at least 4 hours) for the oats and chia seeds to soak up the liquid.
  6. When ready to eat, stir well and top with more fresh fruit, nuts, or yogurt as desired.
