Ingredients

  • 4 cups All-Purpose Flour (or Bread Flour)
  • 1 packet Active Dry Yeast
  • 1 ½ cups Warm Water (110°F/43°C)
  • 2 tablespoons Brown Sugar (or Granulated Sugar)
  • 1 teaspoon Salt (Kosher or Sea Salt)
  • ½ cup Baking Soda
  • 4 tablespoons Butter (melted)
  • Coarse Sea Salt (for topping)

Instructions

  1. In a mixing bowl, combine warm water and brown sugar, sprinkle the yeast on top, and let it sit for about 5-10 minutes until frothy.
  2. In a large bowl, combine the flour and salt. Make a well in the center, and pour in the activated yeast mixture. Mix until a dough forms.
  3. Dust your counter with flour and knead the dough for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for about 60 minutes, or until it doubles in size.
  5. Punch down the dough, divide it into manageable pieces, and roll each piece into a ball.
  6. Bring a large pot of water to a gentle boil and stir in the baking soda. Carefully drop each roll in the boiling water for about 30 seconds, flipping them halfway through.
  7. Place the boiled rolls on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with coarse salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.
  8. Allow to cool for a few minutes before serving.

Notes
