Ingredients
- Boneless chicken breasts or thighs
- Whole wheat breadcrumbs
- 2 large eggs
- 2-3 cloves of fresh garlic, minced
- Low-sugar marinara sauce
- Fresh mozzarella or part-skim mozzarella
- Fresh basil or parsley
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness (about ¾ inch).
- In one bowl, whisk the eggs. In another, combine the whole wheat breadcrumbs with minced garlic, salt, pepper, and a tablespoon of olive oil.
- Dip each chicken breast in the egg, allowing excess to drip off, before coating it thoroughly in the breadcrumb mixture.
- Place the coated chicken on the baking sheet and lightly drizzle with olive oil. Bake for about 20 minutes, or until golden brown and cooked through (165°F internal temperature).
- Remove the chicken from the oven and spoon marinara sauce over each piece. Top with mozzarella slices and basil.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the chicken rest for a few minutes before serving with fresh herbs and a side of sautéed spinach or salad.
Notes
Pound chicken evenly for uniform cooking. Use a meat thermometer to check doneness. Avoid overloading the pan during baking for even cooking.
