Ingredients
- Fresh Greens (Romaine or mixed baby greens)
- Cucumbers (chopped)
- Bell Peppers (mixed colors, chopped)
- Cherry Tomatoes (halved)
- Feta Cheese (crumbled)
- Fresh Herbs (parsley, basil, or mint)
- 1/4 cup Extra Virgin Olive Oil
- Juice of 1 Lemon
- 1 teaspoon Honey
- Salt and Pepper to taste
Instructions
- Wash and thoroughly dry the greens and fresh vegetables. Chop the cucumbers, bell peppers, and tomatoes into bite-sized pieces. Crumble the feta into a bowl, leaving some larger chunks for texture.
- In a large salad bowl, combine the chopped greens and cucumbers. Use your hands to gently toss them.
- Sprinkle in the bell peppers and cherry tomatoes, folding them into your greens.
- In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper. Adjust to taste.
- Drizzle half of the vinaigrette over the salad and gently toss.
- If using fresh herbs, sprinkle them on top. Serve immediately or let it chill in the refrigerator for 10-15 minutes.
- Scoop portions into bowls and drizzle with more dressing if desired.
Notes
Add grilled chicken or chickpeas for added protein. Letting the salad sit for a while allows the flavors to meld beautifully.
