Ingredients

  • Fresh Greens (Romaine or mixed baby greens)
  • Cucumbers (chopped)
  • Bell Peppers (mixed colors, chopped)
  • Cherry Tomatoes (halved)
  • Feta Cheese (crumbled)
  • Fresh Herbs (parsley, basil, or mint)
  • 1/4 cup Extra Virgin Olive Oil
  • Juice of 1 Lemon
  • 1 teaspoon Honey
  • Salt and Pepper to taste

Instructions

  1. Wash and thoroughly dry the greens and fresh vegetables. Chop the cucumbers, bell peppers, and tomatoes into bite-sized pieces. Crumble the feta into a bowl, leaving some larger chunks for texture.
  2. In a large salad bowl, combine the chopped greens and cucumbers. Use your hands to gently toss them.
  3. Sprinkle in the bell peppers and cherry tomatoes, folding them into your greens.
  4. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper. Adjust to taste.
  5. Drizzle half of the vinaigrette over the salad and gently toss.
  6. If using fresh herbs, sprinkle them on top. Serve immediately or let it chill in the refrigerator for 10-15 minutes.
  7. Scoop portions into bowls and drizzle with more dressing if desired.

Notes

Add grilled chicken or chickpeas for added protein. Letting the salad sit for a while allows the flavors to meld beautifully.
