Deliciously sweet and tart Blueberry Muffins, perfect for breakfast or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, melt the butter and let it cool slightly. Whisk in the eggs, milk, and vanilla until combined.
  4. Pour the wet ingredients into the dry, stirring gently until just combined.
  5. Gently fold in the blueberries with a spatula.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

Sprinkle coarse sugar on top before baking for added crunch. Store leftovers in an airtight container.
