Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 cup fresh blueberries
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, melt the butter and let it cool slightly. Whisk in the eggs, milk, and vanilla until combined.
- Pour the wet ingredients into the dry, stirring gently until just combined.
- Gently fold in the blueberries with a spatula.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
Notes
Sprinkle coarse sugar on top before baking for added crunch. Store leftovers in an airtight container.
