Ingredients

  • 1 cup semolina (for puris)
  • 1 pinch salt
  • Water (as needed for dough)
  • Oil (for frying)
  • 2 boiled potatoes (mashed)
  • 2 tablespoons chopped onions
  • 2 tablespoons chopped cilantro
  • 1 tablespoon chaat masala
  • 1 teaspoon black salt
  • 1/4 cup tamarind pulp
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 2-3 green chilies (adjust to taste)
  • Spices: cumin seeds, chili powder (to taste)

Instructions

  1. In a mixing bowl, combine semolina and a pinch of salt. Gradually add water to form a stiff dough. Cover and let rest for 30 minutes.
  2. Divide the dough into small balls and roll each into a thin disc. Heat oil and fry the discs until golden brown. Drain on paper towels.
  3. Blend mint leaves, coriander leaves, green chilies, tamarind pulp, chaat masala, and salt with water. Chill this mixture.
  4. In a bowl, mix mashed potatoes with onions, cilantro, chaat masala, and black salt. Add chickpeas if desired.
  5. To serve, crack the top of each puri, fill with potato mixture, and dip into spicy water. Enjoy immediately!

Ensure puri dough is well-kneaded and rested for optimal puffiness. Adjust spice levels in the water according to personal preference.
