Ingredients
- 1 cup semolina (for puris)
- 1 pinch salt
- Water (as needed for dough)
- Oil (for frying)
- 2 boiled potatoes (mashed)
- 2 tablespoons chopped onions
- 2 tablespoons chopped cilantro
- 1 tablespoon chaat masala
- 1 teaspoon black salt
- 1/4 cup tamarind pulp
- 1/2 cup fresh mint leaves
- 1/2 cup fresh coriander leaves
- 2-3 green chilies (adjust to taste)
- Spices: cumin seeds, chili powder (to taste)
Instructions
- In a mixing bowl, combine semolina and a pinch of salt. Gradually add water to form a stiff dough. Cover and let rest for 30 minutes.
- Divide the dough into small balls and roll each into a thin disc. Heat oil and fry the discs until golden brown. Drain on paper towels.
- Blend mint leaves, coriander leaves, green chilies, tamarind pulp, chaat masala, and salt with water. Chill this mixture.
- In a bowl, mix mashed potatoes with onions, cilantro, chaat masala, and black salt. Add chickpeas if desired.
- To serve, crack the top of each puri, fill with potato mixture, and dip into spicy water. Enjoy immediately!
Notes
Ensure puri dough is well-kneaded and rested for optimal puffiness. Adjust spice levels in the water according to personal preference.
