Ingredients
- 1 cup almond flour
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon (optional)
- 2 eggs
- ½ cup melted butter
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- ¾ cup milk (or dairy substitute)
- ½ cup sliced almonds (or other mix-ins)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a muffin pan with paper liners.
- In a large bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, and cinnamon (if using).
- In another bowl, whisk together the eggs, melted butter, sugar, vanilla extract, and milk until smooth.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold together until just combined.
- Fold in the sliced almonds.
- Fill each muffin cup about three-quarters full and bake for 20-25 minutes until golden and a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These muffins can be customized with spices or mix-ins like blueberries or chocolate chips. Store leftovers in an airtight container.
