Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon (optional)
  • 2 eggs
  • ½ cup melted butter
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup milk (or dairy substitute)
  • ½ cup sliced almonds (or other mix-ins)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a muffin pan with paper liners.
  2. In a large bowl, whisk together the almond flour, all-purpose flour, baking powder, baking soda, and cinnamon (if using).
  3. In another bowl, whisk together the eggs, melted butter, sugar, vanilla extract, and milk until smooth.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold together until just combined.
  5. Fold in the sliced almonds.
  6. Fill each muffin cup about three-quarters full and bake for 20-25 minutes until golden and a toothpick inserted comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
